Freezer Cooking: Burritos

Before Evelyn was born, I filled our freezer with a lot of meals so that I could rest as much as possible.  As you can see, I prepared about 3 burrito meals in advance.  If you’re looking to save yourself time, freezer cooking is the way to go!

    Thanks for the link! In all the freezer cooking I do, I never thought to pre-freeze tacos! What all do you put in them (do you put everything you would if you were making it fresh?) and how did you go about thawing them so they weren’t mushy?

      I got the idea from Money Saving Mom. (She actually has a whole page of Freezer Cooking Recipes). I just put in the stuff that microwaves well…meat, cheese, and refried beans. I sit them out on the counter to thaw in the afternoon, and then microwave them briefly to warm them up at dinner time. Then we add the tomatoes, lettuce, sour cream, salsa, etc at the dinner table. I haven’t noticed much of any mushiness. They hold together pretty well. 🙂

    I am expecting a little one in July. Aside from tacos, what else did you do for freezer cooking. I have checked out Moneysavingmom.com’s freezer cooking but I would love to know what a mom who has just had a baby found to be good for that time. Thank you.

      I froze tacos, chocolate chip cookies, chili, pancakes, spaghetti sauce, and bean soup. Also our church arranged meals for our family for the first week or so. Anything that freezes well can help lighten your load post-baby. 🙂
